An underrated super-food, pigeon pea is an excellent source of amino acids, fiber, and several minerals such as thiamine, folate, iron, magnesium, manganese, potassium and zinc. Included in the group of pulses referred to as dahl in Indian cuisine, pigeon pea can vary in color from cream, grey, purple, black, or spotted.
Adding to the list of this crops wondrous attributes, pigeon pea serves as a fantastic soil stabilizer thanks to its extensive root system. Since pigeon pea has the ability to fix nitrogen from the atmosphere we also employ it as a companion crop, pruning the young leaves and shoots multiple times per year as a green manure; what an amazing plant!
Suggested uses – Worthy of being a pantry staple, this pulse can be used as a part of a bean burger base, a hearty and nutritious soup, or try making the famous Carribean Rice and Beans with coconut milk, yum!
